Preparation of various dishes
Here you will get some general instruction about creating many of my vegan raw food dishes.
If not stated otherwise then the ingredients are for one meal, but this could mean more than one serving of the pictured dish.
All fruits and vegetables have to be ripe. That's of the uttermost importance, only this way they are tasting yummy, have all their essential nutrients in them and can be digested optimally.
Noodles
- Get a Lurch Spirali or an other spirulizer.
- Use the blade for normal noodles
- Put up the summer or winter squash, daikon radish or similar and cut out the noodles
- If you use hard fruits or veggies, like winter squash, you may turn the fruit by hand, not by crank
"Rice"
- Cut celeriac or pumpkin in small pieces
- Put the pieces in a blender with speed control or "chop" setting (like the Blendtec)
- Chop fruits or veggies to "rice"
- Best do this before making the sauce, so you don't have the sauce in your blender ;)
Angelhair "pasta"
- Put the julienne blade on your Mandoline - Slicer
- Deactivate vertical blades and offset
- Cut pumpkin (or similar) into small noodles
Sauces
- Put all ingredients for the sauce in a high speed blender, like the Blendtec
- Put some softer fruits in the blender first so it has something to "chew" on
- Maybe cut harder produce into pieces and put them into the blender with some soft stuff
- Blend ingredients at high speed
Smoothies
- Put all ingredients for the smoothie in a high speed blender, like the Blendtec
- Put some softer fruits in the blender first (like bananas) so it has something to "chew" on
- Cut harder and large fruits into pieces and put them into the blender with some soft fruits
- Blend ingredients at high speed
"Lasagna"
- Slice your ingredients for the layers (like daikon radish, zucchini, lettuce or tomatoes) with your Mandoline - Slicer or a sharp knife
- Use your high speed blender, like the Blendtec, to prepare a creamy sauce with the rest of the ingredients (like the fruits and red peppers)
- spread a layer of ingredients in a rectangular bowl or deep dish
- spread an other layer
- spread a layer of sauce
- add a layer of an other ingredient
- do this until the bowl is full
- pull the bowl over on a plate
Rolls
- Slice daikon radish or zucchini with your Mandoline - Slicer in thin and long slices and place them overlapping on a plate
- Place the cut other ingredients on a small stripe and put some of the sauce on them
- raise the radish/zucchini stripes with a big knife, fold it over the ingredient - stripe and form a roll
Preparation with food ring mold
- Place food ring mold on a plate or spatula
- Chop ingredients as shown in dish "rice"
- Put the chopped ingredients in a bowl and mix them with the sauce until you get a thick dough
- Fill the dough with other ingredients in the food ring mold
- Smooth down everything in the mold
- Use gentle force with the tamper to get the dish out of the ring
